The onboard team is made up of the boat owner and guests/crew who usually don't know each other prior to the trip. The sailing route is set, but may change somewhat if needed due to weather. As a crew member, you'll be expected to help sail the boat and possibly contribute toward other trip expenses (such as food, mooring fees and fuel).
